Ah, I can almost taste it! A yummy Greek salad – Ensalada Greca. A favorite summertime treat, when vegetables are at their freshest. We enjoyed this lovely salad in Verbania, Italy, on Lago Maggiore in the summer of 2018. Oh how we’ve missed our summer vacations to Europe during the COVID pandemic.
